Fatty acid and chemical contents in meat of patch face Maritza lambs, slaughtered after weaning

Fatty acid and chemical contents in the meat of Patch Face Maritza lambs, slaughtered after weaning (60 days), were investigated in this study. Dry matter were 29,98 %, fats - 13,61 %, protein - 15,43 %. Oleic fatty acid ( C18:1) is the primary fatty acid in the meat of Patch Face Maritza lambs - 26,41 %. Unsaturated linoleic ( C18:2) and linolenic ( 18:3) fatty acids contents were respectively - 4, 63 % and 1,32 %, with favourable proportion of them - 3,5 : 1. It was found the tendency of low content of saturated fatty acids - 52,08 % and high content of unsaturated fatty acids - 47,91 %.[BG]
