The areas of organic production expand rapidly throughout the world and the demand for organic products grows. Organic cereals of good quality are widely used both in product processing and expansion of organic crop areas. New advanced technologies free from synthetic substances are applied to improve the quality of organic cereals. These investigations were carried out in order to protect organic cereals from microbiologic pollution.
