25. Fatty acid and chemical contents in meat of Patch Face Maritza lambs, slaughtered after weaning

Fatty acid and chemical contents in meat of Patch Face Maritza lambs, slaughtered after weaning (60 days), were investigated in this study. Dry matter were 29.98%, farts – 13.61%, protein – 15.43 %. Oleic fatty acid (C18:1) is the primary fatty acid in the meat of Patch Face Maritza lambs – 26.41%. Unsaturated linoleic (C18:2) and linolenic (C18:3) fatty acids contents were respectively – 4.63 % and 1.32 %, with favoural proportion of them – 3.5 : 1. It was found tendency of low content of saturated fatty acids – 52.08 % and hight content of unsaturated fatty acids – 47.91%.
